Bananas in the Freezer

I freeze my too-ripe bananas because freezing old bananas is what you're supposed to do with old bananas. That's what "they" do.

Now I have a bunch of frozen bananas in my freezer.

What in the world do you do with frozen bananas?

Banana bread! Here's a recipe Darla and I have started making every week:

2 cups flour
1 1/2 tsp. baking soda
1/2 tsp. salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter
2 large eggs
1 tsp. pure vanilla extract
1/2 cup pecans, finely chopped
confectioner's sugar for dusting

1) combine flour, baking soda, and salt in a small bowl.
2) mash 2 bananas with a fork in small bowl for texture
3) whip remaining bananas and sugar until pudding-like
4) add melted butter, eggs, and vanilla
5) mix in dry ingredients
6) fold in pecans and mashed bananas
7) bake for 1 hour and 15 minutes (we've found it to be less, so begin checking it around 45 min)
at 350 degrees.

That's what I was going to say! The bananas will look horrible when they thaw - but they make great banana bread.

I used to put bananas in my freezer and then never use them. The too ripe bananas in my house never reach their potential because I'm a slacker. Let's hope this is not a reflection of my parenting style.

Smart butts. Akin to Candy Butts?

Thanks for the ideas! I wasn't sure if I should still use them; they've been in there for a while. So even if I defrost them, they're still good?

I did the same thing with old bread. At Thanksgiving I thought, "Heh, maybe I should see if Joy of Cooking has a recipe for making stuffing with old bread crumbs." Whaddaya know.
